While authentic technique and flavor are our sources of inspiration, authenticity is not our aim. It is to honor tradition while giving this magnificent dish a fresh voice. to take inspiration from the neighborhood and express it in a fresh way. Our maize is a local, heirloom, non-GMO variety that has been grown for many centuries. This maize is used to grind our masa every day, and we make our tortillas by hand. As we share the journey our food and drink has taken with you, we all hope you enjoy it.
