Barrel #8 Tasting Notes

courtesy of Remy Newland

Nose: First wave: aromatic tree fruit, hard apple cider, ripe dark berries and spice. Followed up with tropical Juicy Fruit/jackfruit and floral scents. Vanilla pastry cream dusted with powdered ginger and ground cloves. A buoyant, exuberant feel to this profile.
Flavor: Mouth filling fruitiness and agave, accented with punches of piquant pepper and cinnamon. Nice body and oiliness. The pepper heat acquiesces to the fruit and vanilla – but has some muted bitterness on the fade out.
