Volans Single Barrel Reposado
Lot 2, Reposado, Barrel 5. This was our second release of single-barrel tequila aged in used Dickel Barrels. It was bottled in September of 2021 and aged four months. It’s made with three sources of water; rain, spring, and deep well (+450ft deep). This is one of our personal favorites!
Barrel #7 Tasting Notes
Nose: Intensely caramelized cooked agave with a light layer of baking spice. A medley of cantaloupe, vanilla and lightly perfumed orange blossoms. A complementary faint sour note. A light touch of nutmeg. Fruity pineapple, cherry, green apple and subtle citrus. Round and rich teases of butterscotch.
Flavor: Robust spice and pepper attack – more than the “mellowish” aromas had promised: giving this an interesting ticklish/prickly sensation on the palate. This is a fruit and agave agave forward profile. All the fruit and floral elements found in the nose, show up in the tasting experience as well.
Salinity, vanilla and spice contribute to a lengthy finishing impression.
